Ingredients

  • 1.5 cups raisins
  • 1 cup strong black tea, brewed and cooled
  • 1.75 cups all-purpose flour
  • ¾ cup brown sugar, packed
  • 1.5 tsp baking powder
  • 1 tsp vanilla extract

    Preheat oven to 350°F. Line a 9-inch round cake pan with parchment paper.

    Pour cooled tea over raisins in a bowl. Stir and let sit 3 minutes until raisins plump.

    Whisk together flour, brown sugar, baking powder, and a pinch of salt in a large bowl.

    Pour the tea-and-raisin mixture (with liquid) into the dry ingredients. Add vanilla. Stir until just combined—do not overmix.

    Scrape batter into the prepared pan. Smooth the top. Bake 18–20 minutes until a toothpick comes out clean.

    Cool in the pan 5 minutes, then turn out onto a wire rack. Slice thick and serve slightly warm.
