- 1 cup strong black tea, brewed and cooled
- 1.75 cups all-purpose flour
- ¾ cup brown sugar, packed
- 1.5 tsp baking powder
- 1 tsp vanilla extract

Preheat oven to 350°F. Line a 9-inch round cake pan with parchment paper.

Pour cooled tea over raisins in a bowl. Stir and let sit 3 minutes until raisins plump.

Whisk together flour, brown sugar, baking powder, and a pinch of salt in a large bowl.

Pour the tea-and-raisin mixture (with liquid) into the dry ingredients. Add vanilla. Stir until just combined—do not overmix.
