Ingredients

  • 1.5 lb beef sirloin, thinly sliced
  • 12 count corn tortillas
  • ½ count white onion, thinly sliced
  • ⅓ cup fresh cilantro, chopped
  • 2 count limes
  • 2 tbsp olive oil
  • 1 tsp sea salt

Instructions

    Pat beef slices dry with paper towels. Season generously with salt on both sides.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Working in batches, sear beef slices without moving them until edges char and curl, 90 seconds per side.

    Warm tortillas directly over a gas flame or in a dry skillet for 30 seconds per side until pliable.

    Fill each tortilla with charred beef, raw onion, and cilantro. Serve with lime wedges on the side.
