Ingredients
- 2 pounds potatoes
- 8 ounces bacon
- 1 medium onion
- 1 sprig rosemary
- 1 wheel (about 1 lb) Reblochon cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil

Preheat oven to 375°F and lightly oil a baking dish.

Boil potatoes in salted water until just tender, then slice into 1/4-inch rounds.

Cook bacon in a skillet until crisp, then remove and sauté sliced onion in the drippings until soft.

Layer half the potatoes in the dish, top with half the bacon and onion, and season with salt and pepper.
