Ingredients

  • 2 pounds potatoes
  • 8 ounces bacon
  • 1 medium onion
  • 1 sprig rosemary
  • 1 wheel (about 1 lb) Reblochon cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

    Preheat oven to 375°F and lightly oil a baking dish.

    Boil potatoes in salted water until just tender, then slice into 1/4-inch rounds.

    Cook bacon in a skillet until crisp, then remove and sauté sliced onion in the drippings until soft.

    Layer half the potatoes in the dish, top with half the bacon and onion, and season with salt and pepper.

    Repeat layers, then place the Reblochon wheel (rind up) on top and tuck rosemary sprig beside it.

    Bake for 20-25 minutes until cheese is melted and bubbly, then let rest 5 minutes before serving.
