Ingredients
- 2 cups dried tapioca pearls
- 2 cups water
- 1 teaspoon salt
- ½ cup grated Parmesan cheese
- 2 cups vegetable oil

Soak the 2 cups tapioca pearls in 2 cups water with 1 teaspoon salt for 4 hours or overnight, until the pearls are soft and have absorbed most of the water.

Drain the soaked tapioca in a strainer, pressing gently to remove excess water. The pearls should be moist but not wet.

In a bowl, mash the tapioca with a fork until it forms a sticky, dough-like mass. Stir in the 1/2 cup grated Parmesan cheese until well combined.

Shape the mixture into small balls, about 1 inch in diameter, using your hands. If the dough is too sticky, wet your fingers with water.

Heat the 2 cups vegetable oil in a deep skillet over medium-high heat until a small piece of dough sizzles immediately when dropped in, about 350°F.

Fry the fritters in batches, without crowding the pan, for 3-4 minutes, turning occasionally, until they are golden brown and crispy on all sides.
