Ingredients

  • 1.5 cups all-purpose flour
  • 6 tbsp cold butter, cubed
  • ½ cup granulated sugar, divided
  • 1 whole egg yolk
  • 3 medium apples (Fuji or Gala), peeled and sliced thin
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 3 tbsp apricot jam (or honey)

Instructions

    Preheat oven to 400°F. Mix flour, 2 tbsp sugar, and a pinch of salt in a bowl.

    Rub cold butter into flour until it looks like breadcrumbs. Stir in egg yolk until dough comes together.

    Press dough into a parchment-lined sheet pan in an even layer, leaving a 1/2-inch border.
