Swiss Chocolate Walnut Tart

Ingredients
- 1 9 inch pie crust
- 200 g dark chocolate
- 100 g butter
- 100 g sugar
- 3 large eggs
- 150 g walnuts
- 50 g dried apricots

Preheat oven to 350°F (175°C). Press the 1 pie crust into a 9 inch tart pan, trimming edges. Prick bottom with fork and chill for 10 minutes.

Melt 200g dark chocolate and 100g butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.

In a large bowl, whisk 3 eggs and 100g sugar until pale and thick, about 2 minutes. Gradually stir in the chocolate mixture until well combined.

Chop 150g walnuts and 50g dried apricots into small pieces. Fold them into the chocolate mixture, reserving a few walnuts for topping.

Pour the filling into the chilled crust. Sprinkle reserved walnuts on top. Bake for 25-30 minutes, until the filling is set but still slightly jiggly in the center.

Let cool completely on a wire rack for at least 30 minutes before slicing. Serve at room temperature.
