Ingredients
- ½ cup sweet white miso or sweetened red bean paste
- 1 cup mochiko (sweet rice flour)
- ½ cup granulated sugar
- ½ cup cornstarch or potato starch
- ¾ cup water
- 1 package senbei (Japanese rice crackers)

Mix mochiko, sugar, and water in a microwave-safe bowl until smooth and no lumps remain.

Microwave uncovered for 2 minutes, stir well, then microwave 1 more minute until thick and glossy.

Dust a clean surface generously with cornstarch to prevent sticking.

Transfer hot mochi to the cornstarch, cool for 1 minute, then knead gently until smooth.

Divide mochi into 4–6 pieces, flatten each into a thin disc, add 1 tbsp filling in the center.
