Strawberry Daifuku Mochi

Ingredients

  • 1 cup mochiko (sweet rice flour)
  • ¾ cup granulated sugar
  • 1 cup water
  • 3 tbsp cornstarch (for dusting)
  • 8 whole fresh strawberries
  • ⅓ cup red bean paste (anko)

Instructions

    Mix mochiko, sugar, and water in a microwave-safe bowl until smooth with no lumps.

    Microwave uncovered on high for 2 minutes. Stir well, then microwave 1 more minute until thick and glossy.

    Spread cornstarch on a plate. Pour hot mochi onto it and dust the top with more cornstarch. Let cool 5 minutes.

    Pat mochi lightly with cornstarch until it's no longer sticky. Divide into 8 pieces.

    Flatten each piece into a thin disc. Place 1 tsp bean paste and 1 strawberry in the center of each.

    Fold mochi edges up and around the filling, pinching and sealing at the top. Roll gently in palms to smooth.

    Serve immediately or refrigerate up to 2 days in an airtight container.
