Ingredients
- 1 cup mochiko (sweet rice flour)
- ¾ cup granulated sugar
- 1 cup water
- 3 tbsp cornstarch (for dusting)
- 4 oz cream cheese, softened
- 12 whole fresh strawberries

Mix mochiko, sugar, and water in a microwave-safe bowl until smooth with no lumps.

Microwave uncovered for 2 minutes, stir well, then microwave another 1–2 minutes until thick and translucent.

Dust a plate generously with cornstarch. Spread the warm mochi onto the plate and dust the top.

Let cool 5 minutes until you can handle it, then cut into 12 equal squares.

Flatten each square, add 1 tsp cream cheese and 1 strawberry in the center, then wrap and seal.
