Ingredients

  • 1 cup mochiko (sweet rice flour)
  • ½ cup granulated sugar
  • 1 cup water
  • 3 tbsp cornstarch or potato starch (for dusting)
  • ¾ cup red bean paste (sweetened, canned or tube)
  • 1 tsp coconut oil or neutral oil

Instructions

    Mix mochiko, sugar, water, and oil in a microwave-safe bowl until smooth.

    Microwave uncovered for 2 minutes, stir, then microwave 1 minute more until translucent and stretchy.

    Dust a work surface with cornstarch. Pour mochi onto it and let cool 2 minutes.

    Cut mochi into 8 equal pieces. Flatten each, place 1 tbsp bean paste in center, then fold and seal.

    Roll each mochi ball in cornstarch to prevent sticking. Serve immediately or chill.
