Ingredients
- 1 lb thinly sliced beef (such as ribeye or sirloin)
- 1 large onion
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 4 slices provolone cheese slices
- 2 hoagie rolls

In a bowl, mix the 3 tbsp soy sauce and 2 tbsp brown sugar until dissolved. Add the 1 lb beef and toss to coat; set aside.

Heat a large skillet over medium-high. Add the 1 sliced onion and cook, stirring, until soft and golden, about 5 minutes. Transfer to a plate.

Add the beef to the hot skillet in a single layer. Cook without stirring for 2 minutes, then flip and cook until browned and cooked through, about 2 more minutes.

Return the onions to the skillet, stir to combine, and cook for 1 minute until hot. Divide the mixture between the 2 hoagie rolls.

Top each with 2 slices of provolone. Broil or toast in the skillet until the cheese melts and bubbles, about 2 minutes. Serve hot.
