Ingredients

  • 1.5 lbs ground beef
  • 4 count flour tortillas (8-inch)
  • 2 cups red enchilada sauce
  • 1.5 cups shredded cheddar or Mexican blend cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1.5 tsp combined cumin and chili powder
  • 1 pinch salt and pepper to taste

Instructions

    Heat oil in a large skillet over medium-high heat until shimmering, ~60 seconds.

    Add onion and cook until softened, stirring occasionally, about 3 minutes.

    Add minced garlic and cook 30 seconds until fragrant.

    Add ground beef, breaking it apart with a spoon. Cook until no pink remains, ~6 minutes.

    Stir in cumin, chili powder, salt, and pepper. Cook 30 seconds until fragrant.

    Warm tortillas in a dry skillet 20 seconds per side until pliable.

    Spread 2 tbsp enchilada sauce on a tortilla. Add 3 tbsp beef filling down the center.

    Roll tightly, tucking in sides. Repeat with remaining tortillas and filling.

    Pour remaining enchilada sauce into the skillet. Arrange burritos seam-side down.

    Sprinkle cheese evenly over burritos. Cover with foil.

    Heat over medium 4-5 minutes until cheese melts and sauce bubbles around edges.
