Ingredients
- 3 cups beef birria (store-bought or homemade)
- 8 count corn tortillas
- 2 cups shredded cheese (oaxaca or mozzarella)
- 3 tbsp olive oil
- ½ count white onion, diced
- ¼ cup fresh cilantro, chopped
- 1 count lime wedges
- 1 pinch salt and pepper

Heat birria in a small saucepan over medium, stirring occasionally, until steaming, ~5 minutes.

Place cheese and diced onion in a small bowl. Season lightly with salt and pepper.

Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, ~90 seconds.

Place 1 tortilla in the skillet, top with 1/4 cup cheese mixture, then cover with another tortilla.

Cook 2 minutes per side until golden brown and cheese melts, pressing gently with a spatula.

Transfer to a plate and repeat with remaining tortillas, cheese, and oil.

Dip each quesatacos into the hot birria broth, coating the edges for 2 seconds per side.

Place dipped quesatacos back on the plate. Top with fresh cilantro and serve with lime wedges.
