Ingredients

  • 1 cup sweet rice flour (mochiko)
  • ½ cup granulated sugar
  • 1 cup water
  • 3 tbsp cornstarch or potato starch
  • ½ cup jam, nutella, red bean paste, or sweetened filling

Instructions

    Mix sweet rice flour, sugar, and water in a microwave-safe bowl until smooth and lump-free.

    Microwave on high for 2 minutes, stir well, then microwave another 90 seconds until thick and translucent.

    Dust a cutting board generously with cornstarch, then spread the hot mochi onto it.

    Cool for 2 minutes, dust the top with more cornstarch, then cut into 8 squares.

    Gently flatten each square, add 1 teaspoon filling to the center, then fold edges up and pinch to seal.
