Ingredients
- 1 cup sweet rice flour (mochiko)
- ½ cup granulated sugar
- 1 cup water
- 3 tbsp cornstarch or potato starch
- ½ cup jam, nutella, red bean paste, or sweetened filling

Mix sweet rice flour, sugar, and water in a microwave-safe bowl until smooth and lump-free.

Microwave on high for 2 minutes, stir well, then microwave another 90 seconds until thick and translucent.

Dust a cutting board generously with cornstarch, then spread the hot mochi onto it.

Cool for 2 minutes, dust the top with more cornstarch, then cut into 8 squares.
