Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1.25 cup milk
- 2 tbsp butter
- ½ cup heavy whipping cream
- 3 tbsp sugar

Whisk 1 cup flour, 2 eggs, 1 1/4 cups milk, 1 tbsp melted butter and 2 tbsp sugar until smooth, with a pinch of salt if you like.

Heat a nonstick skillet over medium and rub with a little butter. Pour in 1/4 cup batter, swirling to coat the pan thinly.

Cook 1-2 minutes until the edges lift and the underside is golden. Flip, cook 30 seconds more, then repeat with the rest.

Whip 1/2 cup heavy cream with 1 tbsp sugar until soft peaks form, about 2-3 minutes by hand or with a mixer.

Fold or roll the crepes, spoon the whipped cream over the top and serve warm.
