Ingredients
- 1.5 cups fresh grated coconut
- ½ cup jaggery (or brown sugar)
- ½ teaspoon cardamom powder
- 1 cup rice flour
- 1 cup water
- 1 tablespoon ghee (or butter)

In a pan over medium heat, combine 1.5 cups grated coconut, 0.5 cup jaggery, and 0.5 tsp cardamom powder. Cook, stirring, until the jaggery melts and the mixture turns slightly sticky, about 5-7 minutes. Set aside to cool.

In a separate pot, bring 1 cup water and 1 tbsp ghee to a boil. Add 1 cup rice flour, stir vigorously, then remove from heat. Cover and let rest for 2 minutes until cool enough to handle.

Knead the dough until smooth. While still warm, pinch off small balls, flatten into discs, and place a spoonful of the coconut filling in the center. Fold and shape into modaks (or simple dumplings).

Steam the modaks in a steamer for 10-12 minutes, until the outer layer looks glossy and slightly translucent. Serve warm or at room temperature.
