Ingredients
- 3 medium green bell peppers
- 2 small red chili peppers
- 3 tablespoons olive oil
- 3 tablespoons white wine vinegar
- 2 tablespoons sugar
- ½ teaspoon salt

Slice the 3 green bell peppers into 1/2 inch strips and thinly slice the 2 red chili peppers, removing seeds if you prefer less heat.

Heat the 3 tbsp olive oil in a large skillet over medium heat. Add the sliced peppers and cook, stirring occasionally, until they begin to soften, about 5 minutes.

Add the 2 tbsp sugar and 3 tbsp white wine vinegar, stirring to coat the peppers. Season with the 1/2 tsp salt.

Reduce heat to low and simmer, stirring occasionally, until the peppers are tender and the liquid has thickened into a glossy glaze, about 10 minutes.
