Ingredients
- 1.5 cups cooked sushi rice
- 1 sheet nori sheet
- ½ cup cucumber
- ½ cup carrot
- ½ medium avocado
- 2 tablespoons cream cheese

Lay the 1 nori sheet shiny side down on a clean surface. Spread the 1.5 cups cooked sushi rice evenly over the nori, leaving a 1-inch border at the top edge.

Arrange the 0.5 cup cucumber, 0.5 cup carrot, and 0.5 avocado in a line across the center of the rice. Add the 2 tablespoons cream cheese in small dollops along the veggies.

Lift the bottom edge of the nori and roll tightly over the filling, tucking as you go. Moisten the top border with a little water to seal the roll.

Using a sharp knife, slice the roll in half crosswise, then serve immediately. Add soy sauce or sriracha if you like.
