Ingredients

  • ½ lb beef sirloin or ribeye, thinly sliced
  • 1 medium yellow onion, sliced into thin wedges
  • 3 tbsp mirin (sweet rice wine)
  • 2 tbsp soy sauce
  • 1.5 cups cooked short-grain rice
  • 2 whole onsen egg (soft-boiled), room temperature

Instructions

  1. 1

Heat a 10-inch skillet over medium-high. Once hot, add beef in a single layer and sear without moving for 90 seconds until browned on one side.

  2. 2

Flip beef, then add onion slices, mirin, and soy sauce. Toss gently and simmer for 3 minutes until onion is tender and sauce coats the beef.

  3. 3

Divide rice between two bowls. Top each with beef, onion, and sauce.

  4. 4

Carefully slide one onsen egg on top of each bowl. Serve immediately while the egg is warm and the sauce is glossy.
