Ingredients
- ¾ lb beef sirloin or ribeye, thinly sliced
- 7 oz firm tofu, cubed
- 3 cups baby spinach or bok choy, roughly chopped
- 4 oz shiitake or button mushrooms, sliced
- 4 tbsp soy sauce
- 3 tbsp mirin (or 2 tbsp sugar + 1 tbsp water)
- ½ medium white onion, thinly sliced

Heat a large skillet or shallow pot over medium-high. Add 1 tbsp neutral oil, then add onion and mushrooms; cook 3 minutes until softened.
