Ingredients
- 12 whole large mushrooms
- 4 oz cream cheese
- 1 cup shredded mozzarella
- ¼ cup grated parmesan
- 2 cloves garlic
- 2 tbsp fresh parsley
- 2 tbsp olive oil
- ½ tsp salt

Preheat the oven to 375°F. Clean the 12 large mushrooms and remove the stems; finely chop the stems and set aside.

In a bowl, mix the 4 oz cream cheese, 1 cup mozzarella, 1/4 cup parmesan, 2 minced garlic cloves, 2 tbsp chopped parsley, and 1/2 tsp salt until well combined.

Heat the 2 tbsp olive oil in a skillet over medium heat. Add the chopped mushroom stems and cook until soft and fragrant, about 3 minutes. Let cool slightly.

Stir the cooked stems into the cheese mixture. Spoon the filling into the mushroom caps, mounding it slightly.

Place the stuffed mushrooms on a baking sheet. Bake until the mushrooms are tender and the cheese is golden and bubbly, about 20 minutes.
