Ingredients
- 1.5 lb ground beef
- ½ cup breadcrumbs
- 1 large egg
- 4 oz mozzarella cheese
- ¼ cup basil
- 1 cup heavy cream
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 375°F. In a large bowl, combine 1.5 lb ground beef, 1/4 cup breadcrumbs, 1 egg, 1/2 tsp salt, and 1/4 tsp pepper. Mix until just combined.

Cut 4 oz mozzarella into 1/2-inch cubes. Shape the meat mixture into a loaf, then press the cheese cubes into the center, sealing the meat around them.

Roll the loaf in the remaining 1/4 cup breadcrumbs, pressing gently to coat. Place in a greased 9x5 inch loaf pan.

Bake for 35-40 minutes, until the internal temperature reaches 160°F and the top is golden brown. Let rest for 5 minutes.

While the meatloaf rests, heat 1 cup heavy cream in a small saucepan over medium heat. Stir in 1/4 cup chopped basil, 1/2 tsp salt, and 1/4 tsp pepper. Simmer until slightly thickened, about 3 minutes.
