- 1 large bitter melon
- ½ lb ground pork
- 2 stalks green onions
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 2 cloves garlic
- ½ cup water

Cut the bitter melon into 1 inch thick rings, scoop out the seeds and white pith. Sprinkle with 1 tsp salt, let sit 10 minutes, then rinse and pat dry.

In a bowl, mix the ground pork, 1 finely chopped green onion, 1 tbsp soy sauce, and 1 tsp cornstarch until well combined.

Stuff each bitter melon ring with the pork mixture, pressing firmly to fill the cavity.

Heat the 2 tbsp vegetable oil in a large skillet over medium-high. Add the stuffed rings and cook until browned on both sides, about 3 minutes per side.

Add the minced garlic, remaining 1 tbsp soy sauce, and 0.5 cup water. Cover and simmer until the pork is cooked through and the melon is tender, about 10 minutes.
