Ingredients

  • 2 cups all-purpose flour
  • 6 tbsp cold butter
  • 2 tbsp granulated sugar
  • ¾ cup whole milk
  • ½ cup clotted cream
  • ½ cup strawberry jam

    Heat oven to 400°F. Cut cold butter into small cubes and add to flour with sugar and a pinch of salt.

    Rub the butter into flour with your fingertips until it looks like coarse breadcrumbs, about 2 minutes.

    Pour milk in slowly while mixing with a fork until a shaggy dough just forms—do not overwork.

    Turn dough onto a floured surface and gently pat into a 1-inch-thick round. Cut into 8 wedges.
