Ingredients

  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil

Instructions

    Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering, about 1 minute.

    Add 2 cups broccoli florets, 1 cup sliced carrots, and 1 cup green beans. Stir-fry for 4-5 minutes until they start to brown and become crisp-tender.

    Add 1 sliced red bell pepper and 1 sliced yellow bell pepper. Continue stir-frying for 2-3 minutes until peppers are slightly softened but still bright.

    Season with salt and pepper to taste. Serve hot, optionally with soy sauce or a squeeze of lemon.
