Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 4 red chili peppers, sliced
  • 2 tbsp soy sauce
  • ¼ cup cilantro, chopped

Instructions

    Pat the 1 lb shrimp dry with paper towels. Season with a pinch of salt and pepper.

    Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering, about 1 minute.

    Add the 4 minced garlic cloves and 4 sliced chili peppers. Stir-fry until fragrant, about 30 seconds.

    Add the shrimp in a single layer. Cook without stirring for 1 minute, then toss and cook until pink and just opaque, about 2 more minutes.

    Pour in 2 tbsp soy sauce and toss to coat. Cook for 30 seconds until the sauce thickens slightly.

    Remove from heat and stir in 0.25 cup chopped cilantro. Serve immediately.
