Ingredients
- 1 lb pork loin or tenderloin, thinly sliced
- 3 tbsp soy sauce
- 1 tbsp cornstarch
- 3 tbsp vegetable oil
- 4 chili peppers (such as jalapeño or serrano), sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 4 green onions, cut into 2-inch pieces

In a bowl, toss the 1 lb sliced pork with 2 tbsp soy sauce and 1 tbsp cornstarch. Let it marinate for 10 minutes while you prep the vegetables.

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering. Add the pork in a single layer and cook without stirring for 1-2 minutes until browned, then stir-fry for 2-3 minutes until just cooked through. Remove to a plate.

Add the remaining 1 tbsp oil to the skillet. Add the 4 sliced chili peppers, 1 sliced green bell pepper, and 3 minced garlic cloves. Stir-fry over high heat for 2-3 minutes until the peppers are slightly charred and fragrant.

Return the pork to the skillet. Add the 4 green onion pieces and the remaining 1 tbsp soy sauce. Stir-fry everything together for 1-2 minutes until the sauce coats the pork and vegetables and everything is hot.
