Ingredients

  • 8 oz soba noodles
  • 2 tbsp vegetable oil
  • 1 medium onion
  • 1 large carrot
  • 1 medium bell pepper
  • 1 cup baby corn

Instructions

    Cook the 8 oz soba noodles in boiling water until just tender, about 4 minutes. Drain and rinse with cold water to stop cooking.

    Heat 2 tbsp vegetable oil in a large skillet over high heat. Add 1 sliced onion and 1 julienned carrot; stir-fry until slightly softened, about 3 minutes.

    Add 1 sliced bell pepper and 1 cup baby corn. Stir-fry until vegetables are crisp-tender, about 3 minutes more.

    Add the cooked noodles and 3 tbsp soy sauce. Toss everything together until noodles are heated through and coated, about 2 minutes. Serve hot.
