Ingredients
- 1 lb chicken breast
- 8 oz shiitake mushrooms
- 3 cloves garlic
- 3 stalks green onions
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 2 cups cooked rice

Slice the 1 lb chicken breast into thin strips and season with a pinch of salt and pepper. Set aside.

Stem and slice the 8 oz shiitake mushrooms. Mince the 3 garlic cloves and chop the 3 green onions, separating white and green parts.

Heat 1 tbsp vegetable oil in a large skillet over high heat. Add the chicken in a single layer and cook until golden and cooked through, about 5-7 minutes. Remove to a plate.

Add the remaining 1 tbsp oil to the skillet. Add the mushrooms and white parts of the green onions; stir-fry until mushrooms are browned and tender, about 4-5 minutes.

Add the minced garlic and cook until fragrant, about 30 seconds. Return the chicken to the skillet.

Pour in the 3 tbsp soy sauce and stir-fry everything together for 1-2 minutes until the sauce coats the chicken and mushrooms.
