Ingredients
- 4 cups cabbage
- 3 large eggs
- 3 stalks green onions
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- ½ teaspoon salt

Thinly slice the 4 cups cabbage and chop the 3 green onions, separating white and green parts. In a small bowl, beat the 3 eggs with a pinch of salt.

Heat 1 tbsp vegetable oil in a large skillet over medium-high. Pour in the eggs and scramble until just set, about 1 minute. Transfer to a plate.

Add the remaining 1 tbsp oil to the skillet. Add the cabbage and white parts of the onions. Stir-fry until the cabbage is wilted and slightly golden at edges, about 5 minutes.

Return the eggs to the skillet. Add the 1 tbsp soy sauce and 0.5 tsp salt. Toss everything together for 1 minute until well combined and hot.
