Ingredients
- 2 lbs pork spare ribs, cut into 2-inch pieces
- 4 tbsp soy sauce
- 3 tbsp rock sugar (or granulated sugar)
- 2 tbsp rice vinegar (or white vinegar)
- 3 slices ginger, thinly sliced
- 2 stalks scallions, chopped

Heat oil in a large skillet over high heat until it shimmers, about 90 seconds.

Working in batches, sear ribs until edges brown, 90 seconds per side. Don't crowd the pan.

Return all ribs to the skillet. Add soy sauce, rock sugar, vinegar, ginger, and 1/2 cup water.

Reduce heat to medium, cover, and braise for 12 minutes, stirring halfway through.

Uncover and simmer until sauce thickens and ribs are glossy, 3–4 minutes.
