Ingredients
- 2 lbs chicken wings (flats and drums)
- ⅓ cup soy sauce
- 3 tbsp mirin or honey
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar
- 1 tbsp sesame seeds

Pat chicken wings dry with paper towels. Toss with a pinch of salt and pepper.

Spread wings on a sheet pan in a single layer. Broil 8 inches from heat 12 minutes until edges brown slightly.

Whisk soy sauce, mirin, garlic, ginger, and rice vinegar in a bowl until smooth.

Remove wings from oven. Pour glaze over wings and toss to coat evenly.

Return to broiler for 3–4 minutes until glaze is sticky and caramelized, stirring once halfway.
