Ingredients

  • 2 lbs chicken wings (drumettes and flats separated)
  • ½ cup soy sauce
  • 3 tbsp rice vinegar
  • 1.5 tbsp ginger (grated)
  • 6 cloves garlic (minced)
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 stalks scallions (sliced), for garnish

Instructions

    Pat chicken wings dry with paper towels. Season generously with salt and pepper.

    Heat 2 tbsp neutral oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Working in batches if needed, sear wings 4-5 minutes per side until golden and crispy. Transfer to a plate.

    In the same skillet, add garlic and ginger; cook 30 seconds until fragrant. Pour in soy sauce, vinegar, sugar, and sesame oil.

    Return wings to the skillet and toss to coat. Simmer 2-3 minutes until sauce clings and looks glossy.
