Ingredients

  • 1.5 lbs chicken wings (drumettes and flats)
  • 4 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic cloves, minced
  • 1.5 tbsp brown sugar
  • 3 cups crisp lettuce leaves (butter or romaine)

Instructions

    Pat wings dry and season with salt and pepper. Heat oil in a large skillet over medium-high heat until it shimmers, about 1 minute.

    Working in batches, sear wings 3 minutes per side without moving until golden, then transfer to a plate. Do not crowd the pan.

    Reduce heat to medium. Add ginger and garlic, cook 30 seconds until fragrant, then stir in soy sauce and brown sugar.
