Ingredients

  • 1.5 lbs chicken thighs or drumsticks, skin-on
  • 4 tbsp soy sauce
  • 5 cloves garlic, minced
  • 2 tbsp granulated sugar
  • 2 tbsp mirin or honey
  • 1 tbsp rice vinegar
  • 2 whole eggs
  • 1.5 cups steamed white rice

Instructions

    Pat chicken dry with paper towels. Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

    Sear chicken skin-side down 5 minutes until golden brown, then flip and cook 4 more minutes until cooked through.

    Mix soy sauce, minced garlic, sugar, mirin, and vinegar in a small bowl.

    Pour sauce over chicken and toss to coat, cooking for 2 minutes until glossy and caramelized.

    Transfer chicken to a plate. Crack both eggs into the skillet and fry until whites set but yolks still jiggle.
