Ingredients

  • 1 lb pork tenderloin
  • 1.5 cups cooked sweet sticky rice (or glutinous rice)
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 whole lime
  • 3 whole garlic cloves

Instructions

    Warm sticky rice in a microwave or stovetop until hot, about 3 minutes. Transfer to a serving plate.

    Mince garlic. Whisk together fish sauce, brown sugar, minced garlic, and 1 tbsp lime juice in a small bowl.

    Pat pork dry. Season generously with salt and pepper on both sides.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork 6–7 minutes per side without moving until internal temp reaches 145°F (medium). Brush with glaze every 2 minutes.

    Rest pork 2 minutes, slice into strips, and serve over sticky rice with remaining lime wedges.
