Ingredients

  • 1.5 lbs pork shoulder or thighs, cut into 1.5-inch chunks
  • ½ cup soy sauce
  • ¼ cup white vinegar
  • 6 cloves garlic, minced
  • 1 tbsp brown sugar
  • 3 whole bay leaves
  • ½ tsp black pepper

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high until it shimmers.

    Add pork in a single layer. Sear 3 minutes per side without stirring until golden brown on the edges.

    Pour soy sauce, vinegar, and 0.5 cup water into the pan. Add garlic, brown sugar, bay leaves, and black pepper.

    Bring to a boil, then lower heat to medium. Simmer uncovered for 12–15 minutes until pork is tender and sauce thickens.

    Taste and adjust seasoning with salt if needed. Remove bay leaves.

    Serve over steamed rice with extra sauce spooned on top.
