Ingredients

  • 1.5 lbs pork shoulder or butt, cut into 1-inch cubes
  • 3 tbsp shrimp paste (bagoong alamang)
  • ¼ cup white vinegar
  • 4 cloves garlic, minced
  • 1 medium yellow onion, sliced thin
  • ¾ cup water
  • 1 tbsp fish sauce

Instructions

    Heat oil in a large skillet over medium-high heat. Add pork and brown, stirring occasionally, until edges sear, ~5 minutes.

    Add garlic and onion. Stir until fragrant and onion softens, ~2 minutes.

    Stir in shrimp paste, breaking it up with the spoon so it dissolves into the pork.

    Pour in vinegar and water. Bring to a simmer and cook until pork is fork-tender, ~10 minutes.

    Taste and add fish sauce and salt to balance. The sauce should be savory, salty, and tangy.

    Serve hot over white rice with a squeeze of fresh lime if you have it.
