Ingredients
- 1.5 lbs pork shoulder or butt, cut into 1-inch cubes
- 3 tbsp shrimp paste (bagoong alamang)
- ¼ cup white vinegar
- 4 cloves garlic, minced
- 1 medium yellow onion, sliced thin
- ¾ cup water
- 1 tbsp fish sauce

Heat oil in a large skillet over medium-high heat. Add pork and brown, stirring occasionally, until edges sear, ~5 minutes.

Add garlic and onion. Stir until fragrant and onion softens, ~2 minutes.

Stir in shrimp paste, breaking it up with the spoon so it dissolves into the pork.
