Ingredients

  • 1.5 lbs pork shoulder, cut into 1.5-inch chunks
  • ½ cup soy sauce
  • ¼ cup white vinegar
  • 6 cloves garlic cloves, minced
  • 2 leaves bay leaves
  • ½ tsp black pepper

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Working in batches, sear pork chunks 2 minutes per side until golden brown. Set aside.

    Add minced garlic to the skillet and cook 45 seconds until fragrant, stirring constantly.

    Pour in soy sauce and vinegar, scraping up browned bits from the pan. Return pork to skillet.

    Add bay leaves and black pepper. Bring to a simmer, then reduce heat to medium-low.

    Simmer uncovered for 10 minutes, stirring occasionally, until pork is tender and sauce thickens.
