Ingredients

  • 1.5 lbs pork ribs (baby back or spare)
  • 3 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp ginger (minced fresh)
  • 1.25 lbs sweet potatoes (mix of orange and purple)
  • 3 cups leafy greens (spinach, bok choy, or kale)

Instructions

    Pat ribs dry. Whisk ketchup, soy, honey, lime juice, and ginger in a bowl until smooth.

    Arrange ribs on a foil-lined sheet pan. Brush generously with glaze on both sides.

    Broil 6 inches from heat for 12 minutes, brush with glaze again, then broil 8 more minutes until edges char.

    While ribs broil, cube sweet potatoes, boil in salted water until fork-tender, about 12 minutes, then drain.

    Mash hot potatoes with 2 tbsp oil and a pinch of salt until creamy. Keep warm.

    Heat 1 tbsp oil in a skillet over medium-high, sauté greens with salt for 90 seconds until wilted. Serve ribs alongside.
