Ingredients
- 1.5 lbs pork spare ribs
- 3 tbsp white miso paste
- 2 tbsp butter
- 1 tbsp fresh ginger, minced
- 1.5 tbsp mirin (or honey)
- 1 tbsp soy sauce
- 2 stalks scallions, chopped
- 1 tsp sesame seeds

Pat pork ribs dry and season generously with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Working in batches if needed, sear ribs 2 minutes per side without moving. Should be golden brown.

Stir miso, butter, ginger, mirin, and soy sauce in a small bowl until smooth and combined.

Brush miso glaze all over the seared ribs, coating both sides evenly. Transfer skillet to broiler.
