Ingredients
- 1 piece (about 6 oz) beef steak (such as sirloin or ribeye)
- 1 large egg
- 1 tbsp butter
- 1 tsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Pat the steak dry with paper towels and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

Heat the 1 tsp olive oil in a skillet over high heat until shimmering, about 2 minutes. Add the steak and cook for 3-4 minutes per side for medium-rare, or until browned and cooked to your liking. Transfer to a plate.

Reduce heat to medium and add the 1 tbsp butter to the skillet. Crack the 1 egg into the pan and fry until the white is set and the edges are crispy, about 2-3 minutes.

Place the fried egg on top of the steak and serve immediately, spooning any pan butter over the egg if desired.
