Ingredients

  • 1 lb beef tenderloin medallions
  • 4 tbsp butter
  • 2 tbsp fresh parsley
  • 1 clove garlic
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Pat the 1 lb steak medallions dry and season both sides with the 1 tsp salt and 0.5 tsp black pepper.

    Melt 2 tbsp of the butter in a skillet over medium-high heat. Add the medallions and cook until browned and cooked to your liking, about 3-4 minutes per side for medium-rare.

    Transfer the steaks to a plate and let rest while you make the butter. In a small bowl, mix the remaining 2 tbsp butter with the 2 tbsp chopped parsley and 1 minced garlic clove.

    Top each warm steak medallion with a spoonful of the herb butter and serve immediately.

    Optional: add a squeeze of lemon or a pinch of red pepper flakes to the butter if you like.
