Stamppot with Kale

Ingredients
- 2 lb potatoes
- 1 lb kale
- ½ cup milk
- 2 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
- 1 lb smoked sausage

Peel and chop the 2 lb potatoes into 1-inch chunks. Place in a large pot and cover with cold water, add 1 tsp salt. Bring to a boil and cook until fork-tender, about 20 minutes.

While potatoes cook, remove tough stems from the 1 lb kale and chop leaves coarsely. Rinse well and set aside.

When potatoes are tender, drain and return to the pot. Add the 2 tbsp butter and 0.5 cup milk, then mash until smooth.

Stir the chopped kale into the mashed potatoes. Cook over medium heat, stirring, until kale is wilted and bright green, about 5 minutes.

Season with 0.5 tsp black pepper and more salt if needed. Keep warm over low heat.

Slice the 1 lb smoked sausage into rounds. In a skillet over medium heat, cook until browned and heated through, about 5 minutes.

Serve the stamppot topped with the sausage slices. Add a pat of butter or a fried egg if you like.
