Squid Stir-Fry with Peppers and Onions

Ingredients
- 1 lb squid rings
- 1 medium red bell pepper
- 1 medium green bell pepper
- 1 medium onion
- 3 cloves garlic cloves
- 3 tbsp olive oil
- ¼ cup fresh dill
- ½ tsp salt

Pat the 1 lb squid rings dry with paper towels. Slice the 1 red and 1 green bell pepper into thin strips and the 1 onion into half-moons. Mince the 3 garlic cloves.

Heat 2 tbsp of the olive oil in a large skillet over high heat until shimmering. Add the peppers and onion and stir-fry until they begin to soften and char at the edges, about 4-5 minutes.

Push the vegetables to one side of the skillet. Add the remaining 1 tbsp olive oil and the minced garlic to the empty side, cooking until fragrant, about 30 seconds.

Add the squid rings to the skillet and toss everything together. Stir-fry until the squid turns opaque and just firms up, about 2-3 minutes. Do not overcook or it will become rubbery.

Remove from heat and stir in the 0.25 cup fresh dill and 0.5 tsp salt. Taste and adjust seasoning if needed. Serve immediately.
