Ingredients

  • 1 lb squid rings
  • 28 oz canned crushed tomatoes
  • 4 cloves garlic cloves
  • 1 sprig fresh rosemary
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups cooked rice

Instructions

  1. 1

Heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 4 garlic cloves, minced, and cook until fragrant, about 1 minute.

  2. 2

Add the 28 oz crushed tomatoes, 1 sprig rosemary, 1 tsp salt, and 0.5 tsp black pepper. Stir and bring to a simmer, then reduce heat to low and cook for 10 minutes, until slightly thickened.

  3. 3

Add the 1 lb squid rings to the sauce. Stir to coat, then cover and simmer gently for 15-20 minutes, until the squid is tender and opaque.

  4. 4

Remove the rosemary sprig. Taste and adjust seasoning with more salt or pepper if needed.

  5. 5

Serve the squid and sauce over the 2 cups cooked rice, garnished with chopped parsley if desired.
