Ingredients

  • 4 cups fresh spinach (packed)
  • 6 whole large eggs
  • 1 cup Gruyère cheese, shredded
  • ¼ cup whole milk
  • 2 tbsp butter
  • 2 whole garlic cloves, minced

Instructions

    Heat butter in a 10-inch nonstick skillet over medium-high until foaming.

    Add garlic, cook 30 seconds until fragrant, then add spinach in batches. Stir until wilted, ~2 minutes.

    Whisk eggs with milk, salt, and pepper in a bowl. Pour over spinach.

    Sprinkle Gruyère evenly over the top. Reduce heat to medium.

    Cook 6–8 minutes until edges set but center still jiggles slightly. Top should look barely wet.

    Slide onto a cutting board or serve straight from the skillet in wedges.
