Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 tsp red chili flakes
- 2 tbsp lime juice
- ¼ cup fresh cilantro, chopped

Pat the 1 lb shrimp dry and season with salt and pepper. Heat 1 tbsp of the olive oil in a large skillet over medium-high heat until shimmering.

Add the shrimp in a single layer and cook until pink and opaque, about 2 minutes per side. Transfer to a plate and set aside.

Reduce heat to medium and add the remaining 1 tbsp olive oil, 1 sliced onion, and 3 minced garlic cloves. Cook until the onion is soft and golden, about 5 minutes.

Stir in 1 cup tomato sauce, 1 tsp chili flakes, and 2 tbsp lime juice. Bring to a simmer and cook until slightly thickened, about 5 minutes.

Return the shrimp to the skillet and toss to coat in the sauce. Cook until heated through, about 2 minutes.

Remove from heat and stir in 0.25 cup chopped cilantro. Serve hot with rice or crusty bread.
