Ingredients

  • 1 lb pork shoulder or belly, diced into 1-inch chunks
  • 1 lb Yukon gold potatoes, cut into 1-inch cubes
  • 2 tbsp gochugaru (Korean red pepper flakes)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • ¼ cup perilla leaves (kkaennip) or green onion, sliced thin

Instructions

    Heat a large pot over medium-high. Add pork and brown 4-5 minutes, stirring occasionally, breaking up any clumps.

    Add potatoes, gochugaru, soy sauce, vinegar, and 4 cups water. Bring to a boil, then lower heat.

    Simmer uncovered 12-14 minutes until potatoes are tender and pork is fully cooked.

    Stir in sesame oil. Taste and adjust soy sauce or gochugaru for depth and heat.

    Ladle into bowls and top with perilla leaves or green onion. Serve hot with rice.
