Ingredients
- 1 lb pork shoulder or belly, diced into 1-inch chunks
- 1 lb Yukon gold potatoes, cut into 1-inch cubes
- 2 tbsp gochugaru (Korean red pepper flakes)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- ¼ cup perilla leaves (kkaennip) or green onion, sliced thin

Heat a large pot over medium-high. Add pork and brown 4-5 minutes, stirring occasionally, breaking up any clumps.

Add potatoes, gochugaru, soy sauce, vinegar, and 4 cups water. Bring to a boil, then lower heat.

Simmer uncovered 12-14 minutes until potatoes are tender and pork is fully cooked.

Stir in sesame oil. Taste and adjust soy sauce or gochugaru for depth and heat.
