Ingredients

  • 1 lb pre-cooked octopus, cut into bite-sized pieces
  • 3 tbsp gochujang (Korean red chili paste)
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 whole scallion, sliced (white and green parts separated)

Instructions

  1. 1

Heat 1 tbsp olive oil in a large skillet over medium-high until it shimmers, about 90 seconds.

  2. 2

Add garlic and white parts of scallion; cook for 30 seconds until fragrant—don't let garlic burn.

  3. 3

Stir in gochujang, soy sauce, and sesame oil until it forms a smooth paste, about 30 seconds.

  4. 4

Add octopus pieces and toss constantly for 3 minutes until heated through and coated in sauce.

  5. 5

Scatter scallion greens on top and serve immediately over rice or with sesame seeds if desired.
